🥔 Rick’s Cajun Crockpot Potato Soup
A Creamy Campfire Comfort with a Cajun Kick
Loaded with sausage, peppers, and just the right Cajun spice, it’s a crowd favorite when the temperatures drop.
🧂 Ingredients
1 Onion, diced
½ cup Celery, diced
½ Red Bell Pepper, diced
2 tsp Garlic, minced
1 tsp Cajun Seasoning
½ tsp Kosher Salt
½ tsp Black Pepper
½ tsp Paprika
¼ tsp Cayenne Pepper
4 cups Chicken Broth
4 Russet Potatoes, cubed
½ cup Heavy Whipping Cream
1 cup Mild Cheddar Cheese, shredded
1 lb Smoked Sausage or Andouille
1 tbsp Oil
Parsley, chopped
🔥 Directions
Brown sausage and set aside.
Cook onion, celery, and bell pepper until soft; add garlic.
Add Cajun seasoning, salt, pepper, paprika, cayenne, broth, and potatoes. Simmer 25 minutes.
Add sausage, cream, and cheese. Simmer another 5 minutes.
Garnish with parsley and serve warm.
