🥔 Rick’s Cajun Crockpot Potato Soup

A Creamy Campfire Comfort with a Cajun Kick

Loaded with sausage, peppers, and just the right Cajun spice, it’s a crowd favorite when the temperatures drop.

🧂 Ingredients

  • 1 Onion, diced

  • ½ cup Celery, diced

  • ½ Red Bell Pepper, diced

  • 2 tsp Garlic, minced

  • 1 tsp Cajun Seasoning

  • ½ tsp Kosher Salt

  • ½ tsp Black Pepper

  • ½ tsp Paprika

  • ¼ tsp Cayenne Pepper

  • 4 cups Chicken Broth

  • 4 Russet Potatoes, cubed

  • ½ cup Heavy Whipping Cream

  • 1 cup Mild Cheddar Cheese, shredded

  • 1 lb Smoked Sausage or Andouille

  • 1 tbsp Oil

  • Parsley, chopped

🔥 Directions

  1. Brown sausage and set aside.

  2. Cook onion, celery, and bell pepper until soft; add garlic.

  3. Add Cajun seasoning, salt, pepper, paprika, cayenne, broth, and potatoes. Simmer 25 minutes.

  4. Add sausage, cream, and cheese. Simmer another 5 minutes.

  5. Garnish with parsley and serve warm.
